Portuguese Soup Warms the Soul
January 23, 2016
Welcome to Portugal, where every meal can start with soup (except breakfast and tea). The most famous may caldo verde - a Portuguese Vichyssoise, made with simply potatoes and couve galega (kale), chouriço and olive oil.
But soups come in all colors - sopa de nabo, made from turnip, sopa de grão - from chick peas, and sopa de pedra - stone soup made with.... everything!
Try the açorda alentejana, simmered with stale bread, garlic, coriander olive oil and an egg. An açorda de mariscos is a tomato-based seafood soup, and don't miss Portuguese chicken soup - canja de galinha. And then there is caldeirada, a rich fish stew that is sure to please!
