A Portuguese riff off a Brazilian classic

 

The “caipirinha” is said to be related to “poncha”, the drink of the island of Madeira. We’ll meet the Caipirão a new, tasty cocktail. The Caipirão is made with Licor Beirão. This liquor is made in Centro’s Lousã – a historic city in the mountains. Licor Beirão is made with a mix of herbs, and its family recipe is a closely held secret.

3 oz Licor Beirão

1/2 sliced lime

Cut the lime and crush it in an old-fashioned glass. Fill the glass with crushed iced (ice cubes can also be used). Pour the Licor Beirão into the glass and stir well. Note that no sugar is added.
